The ‘Sweet Collection’ is a truly great Brazilian coffee. The expected sweet overtones really come through especially when drunk with milk which accentuates the beautiful sugary aroma. This is a Rainforest Alliance coffee

Background:
The Daterra Estate is best known for its innovative research, its respect for the environment and their workers, and of course its high quality coffee. With its plantations being located in the Cerrado region (State of Minas Gerais) and in the Mogiana region (State of Sao Paulo), the high altitude, stable temperature, and defined rainy season create perfect conditions for sustainable Arabica coffee farming.
Roasting Notes: This is a breeze to roast. It roasts very evenly, but you do need to go easy on the heat, and to drop it right back to stretch out the time between first and second crack.
The Sweet Collection will take a range of roasts from light (stopped up to 30 secs before the onset of second crack), to around 30 secs into second. Our preference is for a roast level a few seconds into second.
