This is a pulped natural from the Fazenda "Monte Alegre" Estate
A natural additive to an espresso blend. Full body, complex and intense, fruit and berry flavours, carry well within an espresso blend or French press infusions. Can be used as estate single-origin coffee which stands well, alone, with its inherent characteristics.
In the pulped natural method only the skins of the fruit are removed; the rest of the fruit residue, consisting of the sticky fruit flesh or pulp, is allowed to remain on the beans as they dry, allowing the beans to absorb some of the sweetness from the flesh.
This bean is typical for a good natural Brazil: Acidity is muted, body is deepened, and nut and cocoa notes tend to dominate. Roasted, this produces an espresso with fabulous nutty aroma, sweet flavour, rich hazel brown crema, full body, low acidity.

Roasting Notes: Some suggest taking this to quite a deep roast, but I suggest just into the start of second is plenty, and don't use too high a heat in the drying phase - it's a relatively soft bean.
