Background
Las Lajas has been producing high quality organic certified coffee since 2000. The coffee is cultivated under a canopy of shade and at an altitude of 1300-1500m.
The farm also has its own ecologically friendly micro mill that employs a ‘dry’ process to remove the pulp from the ripe coffee cherries thereby avoiding contamination of local water sources.
This mircolot is a "miel" or "honey" coffee, meaning that some of the fruit is allowed to dry on the parchment layer on the patio. It actually looks quite unimpressive as green coffee, but roasts up evenly and has a clean, sweet flavor profile.
