Coffee & Farm: Finca Santa Clara (Genuine Antigua)
Country: Guatemala
City / Town: Antigua
Varietal: Bourbon, Caturra, Arabica Tipica
Processing: Fully washed and sun dried
Owner: Zelaya family
Cupping profile and tasting notes:
Transparent, bright acidity, excellent fruit quality, hints of peaches and apricots, silky mouth feel, very well balanced. Good for espresso and filter.
Background:
The Zelaya family have been growing coffee for over 100 years and four generations.
This renowned family owns farms throughout Guatemala and grows one of only a handful of genuine ‘Antigua’ coffees (coffees grown in the Antigua valley area bounded by three volcanoes – Agua, Acatenango and Fuego).
The Zelaya Genuine Antigua coffee comes from Finca Santa Ana, located on the fertile southern slopes of the Volcan de Agua in the Antigua Valley at between 5,200 and 6000 feet above sea level. This fine coffee won 3rd place in the first Guatemala Cup of Excellence.
The Zelaya’s are passionately committed to both quality and sustainability. The family’s Fincas are scrupulously well managed – right from the careful selection of varietals planted, to the close supervision of the dry and wet mills.
All of the Zelaya’s coffee is shade grown which protects the plants from direct sunlight, maintain soil health, and provided an important habitat for birds and insect life. The family’s mills are also eco friendly; all the water used in the wet process is drained into sedimentation tanks and the pulp is transformed to humus by lumbriculture.
