"Nehemiah said, “Go and enjoy choice food and sweet drinks, and send some to those who have nothing prepared.” Nehemiah 8:10 (NIV) Named after a character in the Old Testament, Nehemiah was a key person in rebuilding Jerusalem after the exile to Babylon. And, as you can see from the quote above, he was a bloke who knew the value of a 'sweet drink'.
And that describes a major characteristic of this blend nicely. Naturally, and beautifully sweet, with distinct chocolate or caramel tones on the back of the palate. On the front, there is a distinct, lively but not too aggressive berry fruitiness.
Order this coffee a week ahead of when you want to drink it, as it needs 7 days 'rest' post roast.
Made up from beans from Brazil, Colombia, Ethiopia and PNG, some of those are RFA, Utz Kapeh, Fair Trade and organic certified, while one is organic, but not certified.
Roasting Notes: Start the roast on a high heat (but not an over-hot roast chamber/drum), and keep the heat up until first crack is imminent. Drop the heat back, but don't stall the roast. Take it through to the start of second crack - dump and cool around 10-15 seconds into second.
